Oatmeal and Chocolate Chip Cookies

INGREDIENTS
- 150 ml (2/3 cup) softened butter
- 250 ml (1 cup) brown sugar
- 1 egg
- 10 ml (2 tsp.) vanilla extract
- 375 ml (1 ½ cups) rolled oats
- 250 ml (1 cup) all-purpose flour
- 2 ml (½ tsp.) baking powder
- 2 ml (½ tsp.) baking soda
- 1 ml (¼ tsp.) salt
- 375 ml (1 ½ cups) chocolate chips
PREPARATION
- In a large bowl, using an electric mixer, beat the butter and brown sugar until the mixture has puffed up. Add the egg and vanilla, beating.
- In another bowl, combine the rolled oats, flour, baking powder, baking soda and salt.
- Stir the dry ingredients in the butter mixture until the dough is smooth. Add the chocolate chips and mix.
- Drop the dough, about 1 tbsp. (15 ml) at a time, on baking sheets lined with parchment paper or buttered, leaving a space of about 2-inches (5 cm) between each cookie. Place a baking sheet on the upper rack of the oven preheated to 375 °F and another one on the lower rack.
- Bake for about 12 minutes or until the cookies are golden brown (switch and turn the sheets halfway through cooking). Place the cookies on cooling racks and let cool.
