Beef and Vegetable Stew

INGREDIENTS
- 750 g (1 ½ pounds ) stewing beef
- 45 ml (3 tbsp.)all-purpose flour
- Pepper and salt, to taste
- 6 small onions
- 2 large potatoes, cut into large dices
- 3 large carrots, cut into thick slices
- 3 garlic cloves, thinly sliced
- 500 ml (2 cups)turnips, diced
- 750 ml (3 cups) water
- 300 ml (1 ¼ cup) beef broth
- 1 can of tomato sauce
- 5 ml (1 tsp.) dried thyme
- 2 ml (½ tsp.) dried oregano
- 1 bay leaf
PREPARATION
- Trim all the visible fat from the beef; cut it into 2.5 cm (1-inch) dices.
- In a big saucepan or stewpot, coat the beef with flour.
- Add the onions, potatoes, carrots, garlic, turnips, water, beef broth, tomato sauce, thyme, oregano, pepper and bay leaf; mix thoroughly.
- Cover and cook in the oven at 325 °F for 3 hours; stir occasionally.
- Remove the bay leaf.
