Cod Fish Cakes

INGREDIENTS
- 1 onion, chopped
- 2 tbsp. butter, divided
- 500 ml (2 cups) mashed potatoes
- 250 ml (1 cup) desalinated cod, cooked
- 1 egg
- Salt and pepper, to taste
- 30 ml (2 tbsp.) all-purpose flour
PREPARATION
- Fry the onion in butter.
- Combine the onion with the mashed potatoes and cooked cod. Add the egg, salt and pepper, and mix well.
- Form balls and press them to shape patties. Coat with flour.
- Fry the patties in butter until golden brown.
